A restored 18th-century farmstead set in 66 acres of meadow and woodland marks a joining of forces between chefs Tom Adams of London’s Pitt Cue and April Bloomfield of NYC’s The Spotted Pig – who pops back to the UK whenever she can. The drill is a regularly changing five-course set dinner, served in a single sitting at a 12-seater table. It’s rustic, unfussy fare utilising foraged materials to back up the in-house cured pork and excellent local organic meats.
